Perfect for snacking, our recipe for Curried Vegetable Pakoras is a staff and customer favorite. You can experiment with your favorite veggies, but our usual mix is detailed in the recipe.
Pakora Dipping Sauce
¼ cup organic white vinegar
¼ cup organic agave
3 tbsp organic lime juice
1.33 tbsp organic sriracha
¾ tbsp organic wheat-free tamari
¼ cup organic green onion, sliced
3 tbsp organic basil, minced
½ cup organic garbanzo flour
½ tbsp organic sunflower oil
1 tsp organic curry powder
1 tsp organic baking powder
1 pinch salt
¾ cup organic cauliflower, broken down into small florets
¾ cup organic carrots, sliced 1/2” thick
¾ cup organic yellow onion, sliced 1/2” thick
¾ cup organic broccoli crowns, broken down into small florets
¾ cup organic mushrooms, sliced 1/2” thick
⅓ cup organic green onion, cut into 1” pieces
Mix all the dipping sauce ingredients together. Set aside.
In a large bowl, combine the batter ingredients. Add water and mix until the batter is smooth.
Heat 1” of oil in a large, deep pan over medium-high heat.
Dunk the sliced vegetables in the batter to coat and let the excess drip off. Place them in the hot oil and do not crowd.
Cook until golden brown on both sides, turning once, about 2 Minutes per side.
Transfer to paper towels to drain, then place in a baking pan and keep warm in the oven until all the slices are fried.
Serve hot with dipping sauce on the side.
