Good Earth Roasted Root Veggies with Garlic Lime Sauce

Take advantage of the wonderful root vegetables in season right now! This garlic lime sauce adds a lively punch to an otherwise earthy dish. 

 3 medium organic carrots
 2 medium organic garnet sweet potatoes
 2 medium organic turnips
 2 large organic parsnips
 2 medium organic russet potatoes
 3 organic red beets, peeled
Sauce
 1 tbsp organic garlic, minced
 1 tbsp organic olive oil
 1 tbsp organic cilantro, chopped
 ½ tbsp organic lime juice
 ¼ tsp salt
 ¼ tsp organic white pepper

Preheat oven to 350ºF.

Dice all the vegetables into a 1/2" dice.

Combine all the sauce ingredients in a bowl large enough to accommodate the vegetables.

Add the diced vegetables and toss to evenly coat.

Transfer vegetables to a baking sheet. Cook for 30 Minutes or until a knife easily pierces the densest, biggest vegetables.

Serve hot.
