Preheat oven to 350ºF.
Dice all the vegetables into a 1/2" dice.
Combine all the sauce ingredients in a bowl large enough to accommodate the vegetables.
Add the diced vegetables and toss to evenly coat.
Transfer vegetables to a baking sheet. Cook for 30 Minutes or until a knife easily pierces the densest, biggest vegetables.
