Juicy pineapple, healthy tofu, earthy mushrooms, sweet bell peppers, and onions combine to make these mouthwatering skewers, covered in homemade teriyaki sauce.

 2.50 cups plain firm tofu, cut into 2” squares
 2 cups pineapple, cut into 2” squares
 3 cups red bell peppers, cut into 2” squares
 1 cup red onion, cut into 2” squares
 2 cups white mushrooms, cut in half if large
 2 tbsp olive oil
 ¼ cup tamari
  cup apple juice
 1 pinch red chili flakes
 2 tbsp tapioca flour

Skewer the ingredients, alternating between tofu, pineapple, and veggies.

Marinate in the mixture of tamari, oil, apple juice, and chili flakes for 1 hour.

Grill over medium heat 10-15 minutes, rotating every few minutes.

Heat leftover marinade in a pan and add the tapioca flour. Stir until thickened.

Pour sauce over skewers before serving.
