Good Earth Tofu Grilled Skewers

Juicy pineapple, healthy tofu, earthy mushrooms, sweet bell peppers, and onions combine to make these mouthwatering skewers, covered in homemade teriyaki sauce. 

 2.50 cups organic plain firm tofu, cut into 2” squares
 2 cups organic pineapple, cut into 2” squares
 3 cups organic red bell peppers, cut into 2” squares
 1 cup organic red onion, cut into 2” squares
 2 cups organic white mushrooms, cut in half if large
 2 tbsp organic olive oil
 ¼ cup organic tamari
  cup organic apple juice
 1 pinch organic red chili flakes
 2 tbsp organic tapioca flour

Skewer the ingredients, alternating between tofu, pineapple, and veggies.

Marinate in the mixture of tamari, oil, apple juice, and chili flakes for 1 hour.

Grill over medium heat 10-15 minutes, rotating every few minutes.

Heat leftover marinade in a pan and add the tapioca flour. Stir until thickened.

Pour sauce over skewers before serving.
