Mushroom Stroganoff

This warm, vegetarian stroganoff is one of our coziest and most satisfying dishes. We recommend serving the stroganoff over brown rice, but you can experiment with your favorite grain.

 2 tbsp organic extra virgin olive oil
 1.50 cups organic crimini mushrooms, sliced
 1.50 cups organic white button mushrooms, sliced
 1.50 cups organic portobello mushrooms, sliced
 2 cups organic yellow onion, sliced
 ½ tsp organic paprika
 ¼ tsp organic fresh thyme
  tsp organic whole mustard seeds
 1 pinch organic black pepper
 ½ tsp salt
 2 tbsp organic white wine
 ¾ cup organic sour cream
 2 tbsp organic Italian parsley, chopped

Heat the olive oil over medium-high in a large pan.


Add onions, mushrooms, thyme, and spices to the pan and sauté for 5 Minutes.


Deglaze the pan with the white wine. Reduce the heat to low.


Add sour cream and cook 3 Minutes.


Garnish with parsley and serve warm over rice or the grain of your choosing.
