Additionally, bulk is the area in the store where we are able to offer some of our most budget-friendly and planet- friendly options. Flour is the backbone of holiday baking, and our Bulk department has a wide array of flour options. Below are some of our favorites.
Central Milling Artisan Baker’s Craft Bread Flour
This unbleached, organic, unmalted white flour is designed for artisan bread baking, but it is an all- purpose player, working well for most baking applications including cookies, pizza crust, and sourdough baking. Because of its lower enzymatic activity, it is a good choice for doughs undergoing a longer fermentation period.
Central Milling Buckwheat Flour
Don’t let the name fool you, buckwheat is actually not a type of wheat, nor is it a grain. Buckwheat is a pseudocereal, meaning it comes from a seed, but is consumed and prepared like a grain. Our buckwheat flour, sourced from Central Milling, features a blend of both whole and hulled buckwheat, making for a flour that is a little lighter in color and less bitter than most buckwheat flours on the market, while still maintaining buckwheat’s signature earthy flavor. Buckwheat flour works well on its own in items like crepes or pancakes, but should be mixed with traditional flours for items that require more structure like breads or cakes.
Central Milling Pastry Flours – Unbleached & Whole Wheat Options Available
For many delicate holiday baked goods like cakes, pie crusts, tarts, and delicate cookies, fine-textured pastry flour is the ideal choice. Pastry flour is lower in protein than its all-purpose flour counterpart, so
it creates tender and flaky baked goods because it develops less gluten. We offer two varieties of pastry flour from Central Milling: unbleached and whole wheat. Both varieties are made soft wheat sourced from Washington State.
Burroughs Family Farms Almond Flour
This blanched almond flour is a great gluten-free* alternative to standard flours and can be used in baked goods like cakes and cookies, or to thicken sauces. It boasts a light, nutty flavor and can work in both sweet and savory applications. Our bulk almond flour is sourced from Burroughs Family Farms and is Regenerative Organic Certified.
