Good Earth Oil-Free Coconut Dahl

  ¾ cups organic red lentils
  1 cup organic yellow onion, diced
  1 ½ cups organic cauliflower, broken down into florets
  ½ tsp. organic ginger, grated
  ¼ tsp. organic garlic, minced
  1 tbsp. organic cilantro, chopped
  1 cup organic coconut milk
  ¼ tsp. organic curry powder
  tsp. organic garam masala
  tsp. organic ground turmeric
  ½ tsp. salt
  tsp. organic black pepper

Soak the lentils for 30 Minutes.


Dry sauté onions in a medium pot. Stir frequently and add water in small quantities if needed to keep from burning.


Once onions are soft, add the rest of the ingredients and cook for 20 Minutes, making sure the lentils are tender.


Garnish with more cilantro and serve hot.
