 1 tbsp organic sunflower oil
 1 tsp organic whole cumin seed
 1 tsp organic whole mustard seed
 1 tsp organic whole coriander seed
 1 tsp organic turmeric powder
 1 tsp organic curry powder
 1 tsp organic ginger, grated
 1 tsp salt
 1 pinch organic pepper
 2 organic heads medium cauliflower
 1 tsp organic lime zest

Preheat oven to 375ºF.

Heat oil in a small pan. Toast the cumin and mustard seeds and heat until they pop, approximately 2 Minutes.

Combine all ingredients minus the lime zest in a bowl and toss thoroughly.

Transfer cauliflower mixture to a baking sheet and roast for 15 Minutes to 30 Minutes.

Garnish with lime zest and serve.
