Spice Up Your Turkey Leftovers

Spice up your Thanksgiving leftovers and recreate one of our best-selling soups at home.

Turkey Yucatan Soup

Serves 3-4 Ingredients

Ingredients

– 1 cup Yellow Onion, Diced
– 1 cup Celery, Diced
– 1 cup Carrot, Diced
– 1 cup Russet Potato, Diced
– 3/4 cup Green Bell Pepper, Diced
– 3/4 pound Dark Meat Turkey, Shredded Or Cubed – 1 1/2 quarts Chicken or Turkey Stock

– 1 tablespoon Extra Virgin Olive Oil – 2 teaspoons Lemon Juice
– 1/4 cup Pumpkin Seeds
– 1 handful Cilantro

– 1 handful Italian Parsley – 1 clove Garlic, Peeled
– 1/2 Jalapeno, seeded
– Salt and pepper to taste

1. Heat oil on medium heat. Add onions, celery, carrots, and potatoes and saute until they start to soften, about 5 minutes.
2. Add green bell peppers and saute an additional 5 minutes.

3. Add chicken stock, bring to a boil, and then reduce heat and let the mixture simmer for 10-15 minutes, until the potatoes have softened.
4. Add turkey and let heat through.

5. Blend lemon juice, pumpkin seeds, cilantro, parsley, garlic, jalapeno, and cumin in a blender of food processor. Add to soup and heat through.
6. Salt and pepper to taste. Serve and enjoy!
